Here at Diner News and History we realize we may have neglected to mention an important aspect of diners--the diner waitress. As a seasoned professional, she knows her regulars and what you are going to order as you enter the diner. She's there for advice and at the same time, will let you know when you get out of line. In a sense, she's the unsung heroine of the diner.

Having been a waitress herself, Candacy A. Taylor began researching waitresses for her project almost eight years ago. She has put together an exhibit entitled, "Dishing It Out: Career Waitresses Across the U.S.A." It's currently on display for about the next two months at the San Francisco Public Library.
